Easy yet delicious meal for two: Gourmet Grilled Cheese with homemade fries.
As many of you know my husband is a bodybuilder. I am always looking to come up with quick and easy yet delicious recipes to crave that urge to want to eat out. Typically David and I will go out on the weekends for a cheat meal. This weekend we were in one of our favorite stores World Market and decided to grab a bottle of this beautiful wine. We did a little shopping for my best friends birthday and then decided to head over to Trader Joes for our weekly groceries. I grabbed some fresh sour dough bread, avocados, feta cheese, spinach and russet potatoes. We were about to get a big summer storm and I figured we would throw on a movie, relax on the couch and watch a movie with a homemade meal and some wine. This recipe is perfect for an at home cheat meal.
Chicken & Avocado Grilled Cheese & Homemade Fries
Ingredients
Mayonnaise
2 Large Russet Potatoes
Sourdough Bread
Spinach
1 Avocado
Feta Cheese
1 Chicken Breast
Salt
Pepper
Paprika
Garlic Powder
Olive Oil
Air Fryer & Frying Pan
Directions
French Fries (Air Fryer, 400 degrees for 15 minutes)
Start by scrubbing your potatoes. Slicing them into 1/4" strands with the skin still on them.
Place all sliced fries into a bowl and rinse in cold water several times. Pat dry
Drizzle olive oil (about 2 tablespoons) over the sliced potatoes and mix so they are fully coated.
Season to your liking. We used about 2 tablespoons of paprika, 1 tablespoon of garlic powder, 1/2 tablespoon of pepper and 1/2 tablespoon of salt.
Preheat your air fryer and cook fries for 15 minutes on 400 degrees or until crispy. Pair with organic ketchup or your favorite dipping sauce!
Chicken & Avocado Grilled Cheese (Pan on medium heat over stove)
Slice your chicken breast in half. Season with Garlic powder, salt & pepper or your favorite seasonings. Cook thoroughly in frying pan.
Lightly coat 4 pieces of sourdough bread with mayonnaise.
Place 2 of the pieces of bread on the cleaned pan to begin toasting. While your bread begins to toast, place your chicken breast halves on each slice of bread. Sprinkle Feta cheese on the chicken and top with a handful of spinach and half of an avocado for each sandwich.
Top with the other piece of sourdough bread leaving the mayonnaise side facing up. Once you have a nicely toasted bottom, flip your sandwich and toast the other side. Remove once both sides are toasted to your liking.
Put on a nice movie and enjoy this fresh, easy and delicious meal paired with a glass of wine. Enjoy!
